Fasolada
(bonensoep)
Benodigdheden:
- 1/2 kilo bonen, wit, middelgroot
- 2 takjes bleekselderij
- 3 wortelen
- 1 ui
- 5 teentjes knoflook
- 3 eetlepels olijfolie
- 1 eetlepel tomatenpuree
- 3 laurierblaadjes
- 2 takjes rozemarijn
- 1 blokje groentebouillon
- 2 tomaten
Pluk de bonen en spoel ze af. Week de bonen minimaal 8 uur of een nacht en spoel ze daarna af (of koop ze in een potje). Plaats ze in een grote pan met net genoeg vers water om ze te bedekken. Aan de kook brengen. Verwijder het witte schuim met een lepel en laat de bonen uitlekken in een vergiet. Dit verwijdert eventuele onzuiverheden en het maakt de bonen gemakkelijker te verteren. Plaats de bonen terug in de pan met 1 liter water. Breng aan de kook, zet het vuur laag tot middelhoog en laat ongeveer 30 minuten sudderen. Terwijl de bonen koken, snij je alle groenten. Voeg de ui, bleekselderij, wortelen, knoflook, 3 lepels olijfolie en laurierblaadjes toe aan de pan. Laat het geheel weer, gedeeltelijk afgedekt gedurende ongeveer 30 minuten sudderen, af en toe roeren. Voeg vervolgens de tomaten, tomatenpuree en bouillon toe. Dek de pan weer gedeeltelijk af en laat nogmaals ongeveer 30 minuten sudderen, of totdat de bonen heel zacht zijn en de “soep” dik en romig is. Net voordat je de pan van het vuur haalt, gooi je de laurierblaadjes weg en roer je nog wat olijfolie en rozemarijn er doorheen (naar smaak, dus proeven!) Serveer warm met wat brood en Griekse feta.
